How to Freeze Corn on the Cob Without Blanching
With the gardening season winding down in the states that have cold winters, now is a good time to start freezing any extra corn on the cob. Corn on the cob can be safely frozen without blanching following the steps listed below.
To freeze extra corn on the cob, you will need plastic freezer bags big enough to hold whole ears of corn on the cob husks and all, and a cookie sheet or flat baking sheet that will fit in your freezer.
First, pick corn on the cob from the garden early in the day so you will get that just picked flavor and also to allow enough time to freeze the corn the same day you picked it. Do not remove the husks from the corn before you freeze it.
Inspect the ears of corn for dirt or any other debris on the husks. Brush off any dirt your find. Next, place the corn on the cob, husks and all, into the freezer, laying them flat on a cookie sheet or other flat baking sheet.
Freeze the corn on the cob for two days (48 hours). Once it is completely frozen, remove the frozen corn on the cob from the freezer.
Place the frozen corn on the cob into freezer bags. Label the freezer bags with the date corn was frozen. (Make sure to use frozen corn on the cob within four months). Place frozen corn on the cob back into freezer. Your corn on the cob is now ready to be enjoyed for several months.
When freezing corn on the cob without blanching, it should be used within four months of freezing.
