Spicy Chorizo Fritters with Roasted Red Pepper dip

Recipe for appetizer made from chorizo sausage with a roasted pepper dip.

I came up with this idea the other day whilst preparing crab cakes. I wanted to make something sweet, spicy and crunchy and easy to prepare like a crab cake. so I made these fritters and a dip to go with. Although they are an appetizer, you could have them with a salad or starch for lunch or dinner.

Method

  1. To roast the peppers, toss them in a bowl with a little oil and salt. Place in a roasting pan or on a tray in a pre-heated oven at 350f for about 40 minutes. When the peppers are charred and roasted remove from the oven and place in a bowl and cover with plastic rap. Let them stand for a 20 minutes, then remove the skin and seeds in the sink under running water. Be careful as the inside maybe hot. Alteratively if you have a gas stove top, char the peppers directly over the flame using tongs.
  2. Slice and remove the skin from the chorizo and place in a bowl. Add the sour cream, chilli flakes and breadcrumbs. Combine the mixture and form into balls,flatten the balls to form fritters. Heat a frying pan with enough canola oil to partially cover the fritters. Shallow fry the fritters turning once, about 2 minutes each side, remove and drain on paper towl.
  3. Combine the red peppers with mustard, honey, garlic and oil and process until smooth. Taste and add salt if necessary. Serve the fritters with a crisp salad with the dip to the side.

Ingredients 

  • 3 raw chorizo sausage
  • 1 1/2 cups Italian breadcrumbs
  • pinch chilli flakes
  • 2 Tbs sour cream
  • 2-3 red bell peppers
  • 1 clove roasted garlic
  • 1 tsp deli mustard
  • 1 tsp honey
  • 1/2 cup canola oil, plus oil for cooking
