Turkey Meatballs with White Wine Parsley sauce
Recipe for delicious turkey meatballs in wine parsley sauce.
Ground turkey makes a nice alternative to ground beef or pork, its more healthy, lower in fat and its cheaper. Turkey doesn't have as much flavor as other meats and so needs spice and herbs. Its also good with wine based sauce. You can also use ground turkey to make a great meat loaf. Use the same ingredients as in this recipe, cook in the oven at 350f for about 1 hour. Make the sauce and saute the mushrooms, garnish with mushrooms and chopped parsley.
Method
- Empty the ground turkey into a bowl. Beat the eggs and add to the bowl. Moisten the breadcrumbs with a little milk and add to the bowl along with onion, garlic and a pinch nutmeg. Mix and form into meatballs. Heat a Dutch oven on the stove to medium-high, add some canola oil. working in batches saute the mushrooms until browned, remove and set aside.
- Lower the heat, add some butter, and some flour, just enough to form a paste. Whisk and cook the roux for a few minutes being careful not to let it burn. Add the wine and chicken stock and whisk, bring to simmer. Add the meatballs and mushrooms back to the pot, add the parsley and cook for about 45 minutes. Serve with any kind of pasta or rice.

- 1 cup Italian parsley
- milk
- 2 eggs
- 1 large onion, diced
- 1/2 lb white mushrooms
- nutmeg
- 2 cups chicken stock
- 1/2 cup white wine
- 1/4 stick butter
- flour
- fresh Italian parsley
- canola oil, salt and pepper
