Make pinwheel sandwiches or serve this delicious cream cheese veggie spread on crackers.

How often do you need a quick and easy appetizer recipe?  Just for company, parties, or to take to an event where you need to "bring something."  They travel well, and they feed a lot of people.  They are economical to make, and you may even have these ingredients already.

This vegetable dip spread recipe was adapted from something I first had as a pinwheel sandwich made from tortilla shells. As usual, I tweak things, and it is often due to using what I have! This is totally awesome! While I am writing this, I am eating it on whole wheat bread........My kids love it on tortilla shells, rolled and cut to be pinwheel sandwiches. If you made a ball and rolled it in nuts, dried parsley or dried beef, you would have an awesome cheese ball.

 Ingredients:
* 1 brick of Philadelphia Brand cream cheese, regular style. I guess you could do this fat free, but I am sure it would not be as good!

*3 tablespoons of mayonnaise

* 3 tablespoons of finely chopped green bell pepper

* 4 tablespoons of chopped black olives

 * 2 tablespoons of dried chopped garlic

* 2 tablespoons of dried chopped onion

 * 1 small jar pimentos, undrained

*Crackers or Soft tortilla shells

Mix well, and chill for around an hour. I just can't wait till it is chilled. The dried veggies need time to get soft in the mayonnaise. Enjoy as a dip, spread, or filling for pinwheel sandwiches; this is a great quick and easy appetizer.

Do you know how to make pinwheel sandwiches?  You spread a nice amount on a soft flour tortilla shell, all the way to the ends.  Roll and slice to make little circular pinwheel sandwiches.
