How To Make An Austrian/Polish Tomato Soup Recipe

For this segment it is my grandmother's Tomato Soup recipe.

During pre-world war II Poland, my great-grandmother, my grandmother and my young mother, owned and ran a small butcher shop.  It slowly emerged as a small café-type restaurant just around the corner from the Gestapo headquarters that frequented the café.  My great-grandmother and grandmother was Austrian (as I), but my mom was Polish born.  Luckily, the takeover of Poland did not affect them since they were Austrian citizens.  They later left the country without much trouble.  I’d like to share a few recipes from my grandmother that was passed down to me and I would like to share them with you.  For this segment it is her Tomato Soup recipe.

Needed:

1 lb                  Pork cut ½ to 1-inch pieces

26 oz can         Peeled tomatoes or fresh tomatoes, seeded

1 pint                Sour cream

2 Tbsp             Flour

¼                     stick butter

                        Salt

                        Elbow or shell macaroni

                        Strainer

Get a big soup pot and cook the pork in salted water

In another smaller pot, cook the tomatoes and add the  water and the butter

When the tomatoes are cooked, scoop the tomatoes into an appropriately sized strainer and mash them through it to help remove most seeds

Pour the strained tomato mixture into the meat pot and continue to cook the mixture

Now add the sour cream to soup mixture and stir well until it is well blended

Mix a little flour with water for thickening the soup

Use a mixer to stir the soup as you are adding the thickener

Continue cooking the soup and let simmer

Here is an option for you: add macaroni to the soup or pour soup over macaroni in dish – Enjoy!
