How to Make Goi cuon, fresh spring roll

Goi cuon is a great appetizer, especially for those who are on diet. It has a lot of vege and I like to make it at weekend. It is quick to prepare and you can roll them as you eat.

Ingredients 1 package rice paper 1/2 lb chicken or pork 1/2 lb small shrimp 1 bunch fresh cilantro leaves 1 bunch fresh mint leaves 1 head leafy lettuce 1 cucumber 1 package vermicelli rice noodles 1 hoisin sauce (see hoisin dipping sauce recipe) 1 crunchy peanut butter 1 fish sauce (nước mắm, nước chấm)

What and where to buy:

You can buy these ingredients in Asian stores, Vietnamese stores or farmer market

  • Rice paper (Bánh tráng)
  • Hoisin sauce
  • Fish sauce (nước mắm)
  • Vermicelli (bún)
  • Cilantro
  • Mint

Preparation:

  • Clean cilantro, mint leaves, cucumber. Let them dried
  • Peel and cut cucumber into very thin strips
  • Clean, peel and devein shrimp
  • Boil shrimp and slice into half, along the vein line
  • Boil chicken or pork. Let it cool down and slice into thin strip

Directions

  1. Serve veggies and mint, cilantro, cucumber on a dish
  2. Serve shrimp, pork or chicken on a separate dish
  3. Get a big bowl of water, bring to boil or microwave it
  4. Prepare hoisin dipping sauce (see hoisin dipping sauce recipe)
  5. Dip a sheet of rice paper wrapper into warm water very quickly. Make sure the rice paper all wet, but not soggy. You can use paper tower to dry it.
  6. Lay it flat on a plate
  7. Add shrimp,  a few strips of meat on the edge
  8. Then add lecture, mint, cilantro, cucumber. Don't put too much. It will be hard to roll
  9. Wrap the left and right edges first, then rap from the top, roll them down.
  10. Use your finger to make sure all stuffing wrapped inside the rice paper
How to Make Hoisin Dipping SauceIngredients1 tablespoon hoisin sauce 1 tablespoon crunchy peanut butter1 chili1 clove garlic2-3 tablespoons chicken or pork broth (you can use meat broth from Goi Cuon recipe)
What and where to buy:You can buy Hoisin sauce in Asian farmer marketCrunchy peanut butter can be found in any convenience storeDirection:
  1. Fine chop chili and garlic
  2. Use a small pan over high heat
  3. Add garlic and stir until yellowish brown
  4. Reduce heat to mediumAdd peanut butter and hoisin sauce.
  5. Stir until mix well
  6. Add chicken or pork broth
  7. Add chili
  8. Stir the mixture until well blend and let it cool to serve
