How To Make Your Own Chicken Nuggets, Recipe

This is a great chicken nuggets recipe that is quick and easy and can be thrown together in a pinch.

What kid doesn't like chicken nuggets? Let's face it, most adults have a secret craving for them too! Eating chicken nuggets is as much a part of our childhood memories as Christmas at grandmas or our first day of kindergarten. There are no statistics on preference, but surely if you ask millions of children what they either had or want for dinner, it would be either pizza or chicken nuggets! It's not always convenient or affordable to head out to a fast food mecca or even the local supermarket to grab nuggets. Not to mention, it's not always healthy either! Making your own nuggets can be a fun, inexpensive treat for the whole family! Here's what you'll need:

  • 1 1/4 lbs boneless, skinless chicken breast halves, cut across into 1/2-inch thick slices
  • 1/2 cup low-fat buttermilk
  • Cooking spray
  • 4 cups whole-grain corn cereal, i.e. Chex, or corn flakes
  • 1/4 tsp salt
  • Pinch of freshly ground black pepper

Preheat the oven to 400F.

Mix chicken and buttermilk in a shallow dish. Turn the chicken so that it is coated completely with the buttermilk. Chill for 15 minutes. Spray two baking sheets with cooking spray.

Put the cereal in a plastic zip to lock bag. Crush by rolling with a rolling pin. Put the crumbs into a shallow dish and season it with salt and pepper. Dip each piece of chicken into the cereal and coat fully. Arrange the chicken on the baking sheets.

Bake until thoroughly cooked, about 8 minutes. Leave on sheets to cool slightly. It will become a little crispier out of the oven.
