Zucchini Fritters are very tasty. These are great any time, or as a side dish with a meal. Since these are fried in oil, they are not health but they are delicious.

Here is the list of ingredients that you need to make these.

1 lb of zucchini (about 2 medium sized), coarsely grated (do not peel)
1 teaspoon of salt
¼ teaspoon of pepper (OR use the garlic and pepper mix sold in the grocery store)
1 large egg ( you can omit this)
2 onion, finely chopped
1/2 cup all-purpose flour
1/2 cup oil

Optional you can add sour cream or plain yogurt on the fritters once they are cooked.

Grate your zucchini and allow it to sit in a colander to drain or squeeze out the excess water using a potato ricer or paper towels. Next, you will need to add the teaspoon of salt. Allow this to sit while you prepare the next step.

For this step in a separate bowl, you will mix the flour, onions, and the pepper and mix this. Combine the two bowls, and you are done with the zucchini fritter preparation work, it's on to cooking these wonderful treats.

Add the oil to a large skillet over medium heat. Add the fritter batter by teaspoon to the mix. Use the spoon to flatten down the batter. You do not want a flat fritter, so do not squish this too much.

Fry the zucchini fritters to about five minutes on each side and when they are done allow them to drain on a paper towel. You can serve these with a dollop of sour cream or lain yogurt on top, but they are delicious plain.

If you wish to make these zucchini fritters as part of the meal, serve with a savory meatloaf and mashed potatoes or home fries. For dessert, serve some fresh zucchini bread!
