I had a few bananas that were over ripe, and decided to make banana bread with them. Then as I was putting it in the oven, I thought "Wow, the perfect recipe to put online". I absolutely love banana bread, and wanted to share my recipe with you.

Sometimes, we just need that extra touch of good ole home cooking that brings back the memories of our younger years. I can still remember my mom cooking her old fashion banana bread. I've loved banana bread ever since, but it only seems like I find myself fixing it when my bananas get over ripe. So tonight..... I made banana bread.

Ingredients Needed:

  • 2 cups of all-purpose flour
  • 1 tsp. of baking soda
  • 1/2 cup of butter or margarine
  • 3/4 cup of brown sugar
  • 2 eggs, beaten
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. of salt
  • 3 soft ripe bananas - mashed

Preheat your oven to 350 degrees, and prepare a 9 x 5 loaf pan by lightly greasing the bottom and sides.

Combine baking soda, all-purpose flour and salt in a large bowl. This will be your flour mixture.

Put your butter and brown sugar in a separate bowl and cream together.

Stir your beaten eggs and vanilla in the bowl with the butter and brown sugar. Then add your mashed bananas. Blend all the ingredients well. This is now your banana mixture.

Now stir your banana mixture with your first bowl of flour mixture. Stir just enough to moisten.

Pour batter into a loaf pan that has been greased and floured. Insert into oven, that should be preheated by this time to 350 degrees

Bake for 60 - 65 minutes. Check by inserting a toothpick in the center of the bread, and it comes out clean. Let bread cool in pan before removing and wrapping in plastic wrap. Refrigerate.
