Snowball Cookies!

These cookies look just like snowballs. Prep: 10 minutes, Bake: 15 minutes. This recipes makes 2 dozen cookies. Per cookie: calories 89, fat 4g (3g sat), carbs 12g.

Perfect cookies to set out for guests.  Really easy to make.  They are perfect for the season.  Coconut lovers (like me) will devour them.  They will satisfy any sweet tooth and the kids will love the snowball shape.

INGREDIENTS:

  • 1 cup all purpose flour
  • 1 cup sweetened coconut, flaked
  • 1 1/4 cups confectioner's sugar
  • 4 tsps milk
  • 1 tsp vanilla extract
  • 6 Tbls (3/4 stick) of unsalted butter
  • Pinch of salt
  • DIRECTIONS:

    1Preheat oven to 350º. Using a food processor, grind 1/2 cup of the coconut. Chop the remaining coconut; set aside. To the blender add: flour, salt and 1/4 cup of the confectioner' s sugar. Use the Pulse button on your blender to blend. Add the vanilla and butter to blender and continue to pulse until the dough comes together.

      With your hands, roll the dough into 1-inch balls. Using an ungreased baking sheet, place the balls 1-inch apart.   Bake until firm but tender, about 15 minutes. Cool completely on wire racks.   TO MAKE THE GLAZE;    Stir the remaining 1 cup of confectioner' s sugar with just enough milk to make it smooth but still thick. This is your glaze. 5 Dip cookies into the glaze letting it drip down the sides. Only use about 1/2 tsp of glaze per cookie. Dip in the chopped coconut and set aside to dry.   These look so pretty set on a plate on top of a red, blue or green Christmas napkin.   You can roll the wet cookies into finely grated nuts or toasted coconut.
