A vegetarian alternative to the classic Frito Pie

Frito Pie is one of those classic snacks that is simple to make. What could be easier than three ingredients. Ordinarily chili would be used, but for those of us who don't like chili or want to go the vegatarian route, I will be using re fried beans.

What You'll Need:

  • Re fried Beans
  • Grated Cheddar Cheese
  • A Bag of Frito Chips
  • A Bowl
  • A Medium Saucepan

Step 1: Set your burner to medium heat, and place your saucepan on it. Into the saucepan empty one can of re fried beans. Stirring occasionally until hot.

Step 2: For the cheese, you can either use the already shredded kind you get at the store. Or you can grate your own. If you want to grate your own, you can do that now while the beans are heating up. Either way I find that cheddar cheese works the best.

Step 3: Once the beans are hot, scoop them into your bowl, place frito chips on the beans (for added flavor, try different flavored chips), and your cheese on top of that.

Tips:

1. If after you get the re fried beans out of the pan, they aren't warm enough, try microwaving them. (Use a microwavable safe bowl for best results otherwise the beans may get stuck to the bowl and will be difficult to wash off).  In my personal experience, this can make the bowl too hot to touch right away, you may need to use oven mitts to remove the bowl from the microwave.

2. Try different flavored chips.
