Chocolate Toffee Cracker Cookies

A great holiday recipe for giving as a gifts, serving at events, or for a cookie exchange. The ingredients are usually on hand in most pantries making it an easy recipe to rely on in an emergency.

Six ingredients to a delicious dessert. While the ingredients seem oddly paired together, the result is fantastic. This recipe is truly an example of the sum being greater than the individual parts. What am I talking about? Chocolate Toffee Cracker Cookies. It’s sweet, crunchy, salty and contains chocolate.

The name doesn’t quite relate. They don’t seem like cookies nor do they seem like crackers. They do taste like toffee.

The ingredients:
40 saltine crackers
1 c brown sugar
1/2 c finely chopped walnuts (optional)
2 sticks of butter (you can substitute margarine)
12 oz Chocolate chip
Pam non-stick cooking spray

Directions:

1.    preheat oven to 400*

2.    Line baking sheets with foil and spray with Pam

3.    Arrange crackers on sheets, one layer thick.

4.    in sauce pan, bring the butter and the brown sugar to a boil. Continue to boil for 3 minutes, stirring constantly to prevent scorching the bottom of the pan.

5.    pour the butter and sugar mixture over the crackers and bake in the oven for 5 minutes.

6.    remove the pan and sprinkle choc chips over the top while the crackers are still hot. Return to oven for 2 minutes to melt chocolate.

7.    using a spoon or fork, spread the chocolate over the entire surface.

If you desire, sprinkle with nuts.

place the pan in the refrigerator to cool. When cool, break the toffee into pieces.

Suggestions: use a bar pan or one with a small edge around all four sides so the hot sugar and butter mixture doesn’t run off the pan. If you don’t have a pan like this, form the aluminum foil to create a barrier.

Nuts can be substituted with other forms of nuts if you so desire.

This recipe is great for holiday gift giving and cookie exchanges.
