2 versions of Potato Salads ( Creamy Potato Salad/Simple Potato Salad)

Potatoes are always in season and always had been present on tables of families around the world. There are a lot of ways of preparing potatoes, from simply boiling or mashing, or adding it to some meat dishes and of course making salads which is what this article is all about. Hope you enjoy these 2 versions of Potato salads.

CREAMY POTATO SALAD

INGREDIENTS:

1-1/2 kilo potatoes

2 table spoons vinegar

1/2 cup celery

1/2 cup green onions

2 egg yolks

2 table spoons flour

1 tsp. dry mustard

1 clove of garlic

1 table spoon melted butter

1/2 cup chopped sweet pickles

salt and pepper to taste

PREPARATION:

Cook 1-1/2 kilos potato until just tender.

Drain well and soon after potatoes are cool enough to handle, peel and cut into small cubes. Add 2 table spoons vinegar and toss together. Cool to lukewarm. Add 1/2 cup thinly sliced celery, 1/2 cup chopped sweet pickles, 1/2 cup thinly sliced green onions, salt and pepper. Toss lightly. Cover and chill until shortly before serving time.

Combine two egg yolks, two table spoons flour, one tsp. sugar, one tsp. dry mustard,one tsp. salt in top of double boiler. Beat together until blended. Then stir in one clove of garlic crushed, six rable spoons vinegar and one table spoon melted butter. Set over simmering water until thick, stirring constantly. Remove from heat, stir in cream, and cool.

Add this dressing to the potato mixture about 30 minutes before serving time. Toss lightly to blend, cover and return to refrigerator to chill.

SIMPLE POTATO SALAD

INGREDIENTS:

6 peeled, cooked and diced potatoes

2 chopped hard boiled eggs

4 diced bacon

1 finely chopped onion

1 oz. butter

4 table spoons vinegar

1 beaten egg

salt and peper to taste

lettuce to serve

PREPARATION:

Lightly mix in a bowl the potatoes and chopped hard boiled eggs. Fry the diced bacon and onion in butter until brown. Stir in potato mixture

Beat vinegar slowly, drop by drop, into beaten eggs, season to taste, then stir into the mixture. Serve either hot or cold with lettuce.
