Mexican foods are tasty and spicy. They are convenient to fix because they are simple and healthy too. Two of these burrito's is a meal. I call them Super Burrito's.

The perfect burrito meal is this  recipe.I have made this for years and everyone loves it. It is good with any type of meat in the filling mixture. Chicken,beef,pork or shrimp can be used. I make it with chicken because it is low fat.

Ingredients-

1 large head of lettuce chopped up,1 large onion chopped up small,1 bellpepper chopped small.  2 packges burritto wraps, 1 large jar salsa (hot or mild) .shedded mexican style cheese,sour cream (large) ,1 can of black olives  chopped(large),meat (chicken ) olive oil, 2 cups cooked rice ,2 basil leaves and with 2 chopped tomatoes stirred in.

Satue in skillrt with a couple of one big spoons and a half of olive oil the onion,and bell pepper until they are softened. Add in 4 cups shedded cooked chicken. Then stir in the rice and tomato mixture taking out the basil leaves first..

Heat up the wraps in the oven according to the directions on the label. Then add 3 tbsp. of the satued  mixture on each wrap, roll up and put them in a baking pan close together. Put shedded cheese  and olives on top to your liking and bake again until the cheese melts well.

When you are ready to eat put some lettuce and sour cream on top. Serve with wine or sangria. These buritto's are great for the family meal or a party.  The recipe here makes around 10  delicious burritto's. You can even make extra and freeze them for another meal when there is not much time to cook. Enjoy these Super Burritto's.
