Deliciously Spicy Thai Red Cauliflower Curry

This is a very easy dish to prepare for all vegitarian people who still loves to enjoy a delectable spicy dish.Not only that is tastey but it is also nutritious. It can be enjoyed by all people who loves curry. Hope all the readers will enjoy this easy to cook recipe.

I have always enjoyed cooking and I love experimenting on the different flavours and spices around the pantry. My husband loves Curry dishes and I guess I have tried cooking lots of curry recipes since we got married and most of them includes beef, chicken or lamb. I'm glad I have come across this uniquely delicious and nutritious dish that doesnt need any meat. Not only did my husband loved it he also was glad that I served something different. He was so amazed that something so scrumptious didnt have any meat on it. And the best thing was I was able to make him eat vegetables since he wasnt really a big fan of veggies. I hope you will enjoy this dish as much as my family did.

Ingredients:

1 medium size onion chopped

2 Tablespoons red curry paste

3 cups vegetable stock

400 ml. can coconut cream

1 red bell pepper sliced into thin strips

600 grams cauliflower, chopped

425 grams can whole baby corn, drained

300 grams snow peas, cut into halves

200 grams baby spinach leaves

sliced red chilli, to garnish

Preparation:

First, heat a large sauce pan, Cook onion and curry paste until onion is soft. Add the vegetable stock and coconut cream. Bring to the boil.  Add the red bellpepper strips and chopped cauliflower. Simmer uncovered for about 10 minutes or until cauliflower is tender. Add the drained corn, peas and baby spinach leaves. Simmer for another 2 minutes. Garnish finish dish with chilli. Serve over steamed rice.

TIP: You can try using different flavoured curry pastes such as green curry paste or even an Indian flavour such as madras.
