Meatless Meatballs Recipe

These meatless meatballs are delicious, nutritious, and easy to make.

These delicious vegetarian “meatballs” are good on their own, or can be served with pasta, like traditional meatballs.  They are easy  to make, but will quickly become a family favourite.  These will not look exactly like meatballs made from mince, and the taste is not trying to imitate meatballs either.  They have a deep nutty taste that is distinctive and delicious.  Also, they are high in protein.

Meatless Meat Ball Recipe

Ingredients:

6 eggs

½ cup cottage cheese (low-fat works fine)

2 cups cheddar cheese, grated (other hard cheeses, such as Emmental, can also be used)

1 ½ cups bread crumbs (preferably wholemeal, but any bread you have will do)

1 ½ cups pecans (can also use walnuts)

1 ½ cups finely diced onions

¾  cup finely chopped broccoli (the stalk works well as well as the florets)

Directions:

1. Preheat oven to 350 F (180 C).

2.  Mix all ingredients together and season to taste (I usually add black pepper and some Italian herbs: rosemary, basil, thyme, and oregano).

3.  Form into balls and place in lightly greased baking pan. 

4.  Cover balls with tomato sauce (pre-bought spaghetti sauces work well), and then cover pan with tin foil.

5.  Bake for approximately 25 minutes, taking the foil off for the last five minutes.

6.  Serve either with pasta, with rice, on their own, or with vegetable side dishes.  Enjoy.

These meatballs often taste better the second day, so make sure to cook extras.  They also freeze well, so you can make a large batch, and then freeze portion-size containers of them to reheat as needed.
