Quick Pork 'n' Peanut Casserole

A quick and tasty family meal which can be prepared in advance. It requires very little attention during cooking leaving the hostess or cook worry free.

Pork ‘n peanut casserole. 

This is a quick tasty recipe with ingredients that can be varied according to what is available in your kitchen. 

Ingredients:

1 lb pork loin

2/3 rashers of bacon

peanut butter

frozen corn

chicken cube

garlic clove

onion

courgettes or celery

olive oil

Method 

Dice pork, and all the vegetables.  Crush the garlic clove.

Remove any fat from the bacon and slice into narrow strips. 

Heat olive oil and fry the meat and vegetables gently,(omitting the corn), until  the pork is lightly browned and the vegetables have softened a little.  Remove from heat. 

Sauce

Meantime dissolve the chicken cube in a pint of boiling water and stir until it has dissolved.  Add 2 tablespoons of crunchy peanut butter.  Stir in until blended with the rest of the sauce.

Pile the pork and vegetables into a large casserole dish.  Pour sauce mixture over the meat and vegetables, ensuring they are well covered. 

Place in a moderate oven (150centigrade) and cook for an hour.  Check half way through that there is sufficient sauce remaining to cover the meat.  Add a little extra boiling water if necessary. 

When meat has cooked, remove from oven, thicken with a little flour dissolved in a little milk and add corn.  Return to oven for 15 minutes.  Serve with rice, roast potatoes or chips.  For a healthy option a side salad could replace the rice or potatoes.

This is a quick and easy recipe with room for variation according to your taste.  A little soya or Worcester sauce can ring the changes.  A jar of Stir in Sweet and Sour Sauce could also be added, in which case you will require  less water and the peanut butter should be omitted.

This is a family sized meal for four people.  Ideal for the summer as  preparations can be made in advance and a hot kitchen avoided most of the time the food is cooking.
