This chewy oatmeal cookie recipe is so very good and easy. You can make a whole batch in 45 minutes...

This chewy oatmeal cookie recipe is on this site because my neighbor has been "pestering" me for the recipe.... So sweet - and wonderful - neighbor of mine here it is!

I guess I started an "oatmeal chocolate chip cookie addiction" when I started sending these oatmeal chocolate cookies next door. But they are the best neighbors ever - more like family really - and I do HAVE to spoil them.

On the flip side of this, I don't know what bargaining power I'll have now when I am out of sugar - or chocolate chips or whatever - as the "a dozen cookies for 1/2 cup of sugar" may not work as well.

Nonetheless, this is the best chocolate chip cookie recipe I have so far and it only takes 45 minutes from start to finish. Yes, I did time it...last Saturday as a matter of fact as I was trying to whip up a batch under one hour...and I did!

This recipe is so fast and easy and this chewy oatmeal cookie recipe comes out perfect every time. My nine year old daughter and

her best-friend even made a batch all on their own for an impromptu tea party.

Ingredients for the Best Chocolate Chip Cookie Recipe


  • 1 cup of butter softened
  • 1 cup of light brown sugar
  • 2 eggs
  • 1/2 cup of white sugar
  • 2 tsp of vanilla extract
  • 1 3/4 cups of all-purpose unbleached flour
  • 1 tsp baking soda
  • 1/2 tsp of salt
  • 3 cups of quick oats
  • 1 cup of semi-sweet chocolate chips
  • 1 cup of peanut butter chips
  • 1 cup of toffee morsels or white chocolate chips
  • 1 cup of walnut or pecan pieces or a mix of both
