Bake a Cake in your Bread Machine

Did you know you can bake a cake in your bread machine?

It's amazing that I have never met another person who bakes cakes in their bread machine!  So I thought it might be helpful to some of you to get this information. 

If you don't have a bread machine, you can get one very cheaply at thrift stores.  This is because people got them and decided they didn't want them for whatever reason.  I have two; they are often running at the same time. 

You can bake a cake in your bread machine with so little effort that you will find yourself buying fewer and fewer snack cakes and other store-bought sweets.  They are also great to have for church dinners, birthdays, and funeral food.  If you save cake mix coupons or use store brands, you can bake a cake very cheaply.

If your bread machine has a cake setting, you can easily bake a cake in it.  If it doesn't you just need to use the "rapid" setting.  If you use rapid, you might need to watch to be sure it doesn't burn. 

When I bake a cake in the bread machine, I start by placing two tablespoons of oil in the pan. This needs to be swirled around to cover the edges. 

Mix your cake mix according to directions.  Pour into bread machine pan.  Place pan in machine and push Cake. 

If you are using Rapid setting, you don't need to stir as much because it will mix some in the bread machine. 

When the cake is done, remove the pan and allow to sit on a hot pad to cool slightly.  Using a long spatula, go around the sides to loosen the cake from the pan.  Using hot pads, dump the cake onto a plate.  While it is still warm, with a steak knife, slice into two layers.  Each one would be on its own plate to cool.  

When cool, ice with a tub of frosting, getting a nice thick amount between the layers.  You need to take care not to get crumbs into the frosting, since you have cut the cake. 

 It makes an odd-sized little cake, but the moist taste is amazing.  It makes a cake-mix cake taste like a cake made from scratch.  If you don't want a tall, two-layer cake, you can lay the two layers side by side on a cookie sheet or platter, ice, and serve as a sheet cake.

Some cake mixes that adapt particularly well to bake a cake in a bread machine are:  Lemon cake and spice cake, both iced with cream cheese icing.
