Berry Delicious Eggnog

A delicious alternative to the usual eggnog for you to try this holiday season.

Christmas time is time for making up some Eggnog, but sometimes I feel it’s not quite enough.   To add a little more flavor to your Eggnog this holiday season why not try adding berries.

You could try muddling some mixed berries and putting a little in each glass before topping up with your normal Eggnog recipe or you could try a delicious Raspberry and Butterscotch Eggnog.   This recipe combines one of my favorite berries with one of my favorite schnapps – what’s not to like?

Raspberry & Butterscotch Eggnog

1 cup of raspberries (I always have some frozen ones in my freezer so I just take them out in advance to defrost)

3 cups of milk

600ml thickened cream

4 eggs

½ cup sweetened condensed milk

¾ cup butterscotch schnapps

Blend the raspberries until smooth and put to one side.    Next pop all the other ingredients into the blender and blend until smooth.   Add the raspberries to the eggnog mixture and blend to combine.   Strain the mixture to remove the seeds and then refrigerate until ready to serve.  

The sweetness of the butterscotch combined with the sharpness of the raspberries makes this Eggnog a real winner in our household.

For a non alcoholic version try this Mixed Berry Eggnog

2 cup milk

2egg

2 tbsp sugar

½ tsp vanilla extract

1 banana

½ cup mixed berries

Beat the egg well and pour into a blender with all of the other ingredients (frozen berries work really well), blend until smooth.   Refrigerate until ready to serve.   I always add some whipped cream on top of this Eggnog version!
