Here is a quick and easy breakfast casserole that you can prepare the night before you need it.

Christmas morning is hectic enough. Each year seems to be getting busier and more hectic. We are opening presents, cleaning up wrapping paper, assembling toys, preparing the turkey or ham for Christmas dinner, and going to visit family. Who has the extra time to make breakfast? This casserole is great because it can be prepared the day before and cooked while unwrapping gifts. Plus there is the extra bonus of no mess and very little clean up. My family really enjoys this recipe and I hope you will too.

Things You’ll Need:
  • 6 eggs
  • 2 cups milk
  • 1 tsp salt
  • 1 cup shredded cheddar cheese
  • 1 lb sausage
  • 4 slices bread
  • 9x13 casserole dish

In a frying pan, brown and drain sausage. Set aside. In a large mixing bowl beat 6 eggs. Add the milk, and salt to the bowl. Gently stir in cheddar cheese and sausage. Cut the bread into cubes and add to the mixture.

Place in a buttered casserole dish. Cover and refrigerate overnight.
On Christmas morning, place the casserole in a cold oven set to 350 degrees and bake 45 minutes. I am sure this will be a family tradition for many Christmas' to come. Enjoy!

* Tip:  This casserole is best when served hot. We tried it warmed up and it was not that good.

This is the Christmas Morning Casserole that was mentioned in my article "A Collection of Christmas Traditions".
