Easy Chicken and Rice Casserole

We all know how precious our time is in this day and age. This recipe is easy to put together and very delicious!

I have used this recipe several times and my family always asks for seconds.  It is very easy and involves little fuss.  Preparation time is about 10 minutes and the end result is delicious.  Be prepared to make this recipe several times over. It will become quite the popular dish!

Ingredients

  • 8 chicken drumsticks (or equivalent amount of chicken)
  • 2 small boxes or 1 family size box of chicken rice a roni
  • 1 large can of cream of chicken soup

Method

Grease one 8×12 baking dish. Pour the rice a roni in the bottom of the pan. Place the raw chicken on top of the rice. Sprinkle the package of seasoning that comes with the rice, on top of the chicken. Pour the can of Cream of chicken soup evenly over the top of the chicken. Fill the empty chicken soup can half full of water and pour into the pan. Cover with foil and bake in a 350 degree oven for 1 1/2 hours. Baking time may vary depending on the size of chicken or if it’s still somewhat frozen. Just make sure the juice from the chicken runs clear and not pink. I usually stir the rice on the bottom about halfway through the cooking time just to make sure it cooks evenly and doesn’t stick to the bottom. Also make sure you turn your chicken if the pieces are touching.

Makes enough for a family of four. It may take a bit in the oven but there’s not much fuss in putting it together!
